The serial number on Linksys analogue adaptors and phones is on a sticker on the underside. The number begins "8801" or "F". If the device is operational then the serial number is also on the "Info" tab of the web interface of the device.
The serial number for UTStarcom phones is the same as the MAC address. This is printed on a label on the original box and also on the back of the phone underneath the battery. The "Device ID" is NOT the serial number.
